Chicken, Onion, and Pepper Enchiladas

This Dish was sooooooo Good!!!

Anyway so yesterday I made this amazing dish. It was creamy and rich. It only took me a 10 minutes to prep and 20 minutes to bake. Recipe is below:

Creamy Chicken Enchiladas

Ingredients:
2 cups of leftover chicken
1 Tbsp Taco Seasoning
1 Cup salsa
1 can of cream of chicken soup
8  Flour Tortillas
1/2 cup Mexican blend shredded cheese
1/3 cup sour cream
* I added 1/2 cup of onions(sauteed) and peppers(sauteed)

Heat Oven to 350 degrees

Mix Salsa and cream of chicken soup together in a bowl

In another bowl, mix chicken, taco seasoning, cheese, veggies( if you are using them), and sour cream

Fill the center of each tortilla and roll up. Place the rolled up tortillas in your baking dish( make sure to spray dish with Pam spray) with the exposed edge side down. Pour you salsa/soup mixture on top and make sure to cover all over the top of the tortillas. Top with more cheese if you desire.

Bake 20 minutes or until heated through. Serve with salsa and sour cream.
